Before you open your restaurant or café: 10 operational steps you shouldn't skip
Before opening, many owners focus on the décor, the menu and the marketing, and discover a few weeks later that the real problem is operations: late orders, inconsistent quality, and staff who don't know what is expected of them. These ten operational steps help you avoid that.
1. Write down how you'll work before you hire
Define how the restaurant will run: the flow of an order from the cashier to the kitchen to the guest, the roles in each shift, and the opening hours. This is the foundation of your operations manual.
2. Fix your standard recipes
For every item: ingredients by weight, preparation method, a plating photo and portion cost. A standard recipe protects both quality and margin.
3. Define the organisation
Who is responsible for what? Branch manager, shift supervisor, head chef, cashier, service and cleaning staff. Write down each role's responsibilities and who they report to.
4. Train before opening, not after
Set aside days to train on procedures and recipes, and hold a soft opening for staff families or friends before the official launch.
5. Choose suppliers and agree on receiving standards
Set delivery times, quantities and the criteria for accepting or rejecting goods, especially the temperatures of chilled and frozen products.
6. Set up food safety from day one
Temperature logs, colour-coded boards and utensils, date labels and fully equipped hand-wash sinks. See the daily food safety checklist.
7. Put a cleaning schedule in place
Divide the site into areas and set how often each task is done and who does it. See the restaurant cleaning schedule.
8. Prepare opening and closing checklists
A short list for each, signed daily by the shift supervisor: equipment, temperatures, the till, cleaning and locking up.
9. Plan equipment maintenance
A preventive maintenance schedule for every major appliance, technicians' contact numbers, and what to do when something breaks at peak time.
10. Measure quality from the first week
Don't wait for complaints. Start quality inspection visits in the first week; habits form at the start, and correcting them early is much easier.
